However, you will see lots of clever recipes all over the web that claim you can replace all the butter, eggs, and oil in a cake with diet soda or fizzy water and get an excellent result. Diet soda in baking
First, a word on using diet soda, or any products with aspartame and sweeteners in when cooking. I would think twice about this if I were you. Why? Well, it’s because cooking changes the molecular structure of whatever is cooked, and in the case of sweeteners, this can result in some yucky things that you don’t really want to put in your body. So, no matter how much you crave a cake when you are on a diet always remember to think carefully about the quality of the stuff you are putting into your body, in addition to just its calorie value.

With this in mind, here is an easy recipe that you can use in place of the cake mix to create your low sugar cake, and still ensure that it’s as delicious as possible.
You will need :
1 ¾ baking powder (teaspoons)
1 ½ cups whole wheat pastry flour – healthier than white flour
¾ cup sugar (white) – reduced sugar
¾ low-fat milk
Vanilla Extra two teaspoons
Add the dry ingredients and combine. Then add the liquids including your 330ml of sparkling water and beat until smooth. Then add to tins or cases as usual and bake on 180 for 20 mins checking at 5 min intervals after that, to see if it’s cooked all the way through, and there you have it. A delicious scratch cooked cake that’s low sugar too!
