I don’t know about you, but I’m a tad skeptical about anything that says its low sugar and tastes great. However, you will see lots of clever recipes all over the web that claim you can replace all the butter, eggs, and oil in a cake with diet soda or fizzy water and get an excellent result. Read on to find out more.


Diet soda in baking

First, a word on using diet soda, or any products with aspartame and sweeteners in when cooking. I would think twice about this if I were you. Why? Well, it’s because cooking changes the molecular structure of whatever is cooked, and in the case of sweeteners, this can result in some yucky things that you don’t really want to put in your body. So, no matter how much you crave a cake when you are on a diet always remember to think carefully about the quality of the stuff you are putting into your body, in addition to just its calorie value.


Fizzy water


So if diet soda is out, what can we use instead? Well, the answer is a product like this Hint Fizz sparkling water can act as a good substitute. This is because it has the bubbles that give your cake that light, airy finish. You can also get sparkling waters in some delicious flavors that will enhance the taste of your cake, without adding ingredients that contain sweeteners. Just replace the soda for the sparkling water in a 1:1 ratio in the recipe.


Boxed cake mix


Most of the recipes that detail using soda or water in a cake work on boxed mixes that you buy from the store. The advantage to using these are that they are super easy, it’s literally a two ingredient recipe,  with no measuring needed. You also know that they will always turn out right each and every time. Another advantage is that you can get the sugar free mixes to ensure that the calories remain as low as possible, great for those watching their weight.


However, some folks especially ones that are really into their baking like me, don’t like using boxed mixes. They prefer to make their cake from scratch for a better flavor.


From scratch

With this in mind, here is an easy recipe that you can use in place of the cake mix to create your low sugar cake, and still ensure that it’s as delicious as possible.

You will need :

1 ¾ baking powder (teaspoons)

1 ½ cups whole wheat pastry flour – healthier than white flour

¾ cup sugar (white) – reduced sugar

¾ low-fat milk

Vanilla Extra two teaspoons


Add the dry ingredients and combine. Then add the liquids including your 330ml of sparkling water and beat until smooth. Then add to tins or cases as usual and bake on 180 for 20 mins checking at 5 min intervals after that, to see if it’s cooked all the way through, and there you have it. A delicious scratch cooked cake that’s low sugar too!
